Interesting pairing experience declared the assistence, as per Didier Depond himself, President of Champagne Salon &nd Champagne Delamotte : "It is the first time I have ever had Salon with hoddock and chips (...) for me the match is pefect." The creamy mousse and opulent minerality of the wine did indeed cut through the batter and robust, perfectly-cooked fish, was the general opinion.
Jamie Goode judged as an "inspired idea" that "rather than match this aristocratic fizz with a Michelin starred menu, Corney and Barrow had the fun idea of launching Salon's latest release with good old fish and chips, at Geales fish restaurant in Notting Hill".
For him "the result was pretty good. Salon 1999 is a lovely Champagne, taut, concentrated and intense, with a mineral dimension as well as some richer toasty notes."
