Le millésime se trouve petit à petit chez les cavistes, restaurateurs et nous avons pu en faire goûter à quelques journalistes.
Voici deux commentaires écrits sur le nouveau millésime de Champagne Salon.
"Subtle ginger, floral and citrus aromas build to flavors of lemon
pie, honey and hazelnut. Elegant and refined, with a firm underlying
structure and a long aftertaste."

"Salon 1997 Champagne is certainly extremely individual: very tense and tight-knit with a sort of filigree texture, athletic rather than corpulent - really quite delicate with an exotic whiff of incense. It would make a super-luxurious aperitif (I can't quite see it being substantial enough to drink with food) at any point over the next five to 10 years, I would have thought. It's rather a ballerina whereas the 1999 waiting in the wings sounds a bit of a boxer."
