Ce premier week end du Printemps nous avons fait une dégustation inédite outre-atlantique.

Grâce au talent et la passion de Bipin Desai, nous avons pu faire une dégustation avec 24 inconditionnels du Champagne Salon au restaurant californien mythique du Chef Wolfgang Puck, Le Chinois on Main.

Nous avons dégusté 5 millésimes de Champagne Delamotte Blanc de Blancs et 9 millésimes de Champagne Salon autour d'une cuisine précise et cohérente étudiée par le Chef Wolfgang Puck.

We welcomed the first week end of Spring this year with an unprecedented tasting in the US.

Thanks to the talents and passion of Bipin Desai, was organised a tasting with 24 Champagne aficionados at Wolfgang Puck's historic restaurant, Chinois on Main.

Around 5 vintages of Champagne Delamotte and 9 vintages of Champagne Salon, Wolfgang Puck designed a precise and coherent tasting menu daring some complex pairing with the older vintages.

Les convives allaient redécouvrir la grandeur de Salon. En effet, les millésimes de Salon ont d'abord imposé le silence, ensuite la tempête de tant de sensations mêlées aux mets. Grands, puissants et étonnants de fraîcheur jusqu'au mythique 1951 que seules deux maisons champenoises ont osé produire, et quel vin!

En sus, on eut en surprise supplémentaire la découverte des grands vins de Delamotte. Un consensus s'est installé autour des 6 tables avant même d'attaquer les vins de Salon. Delamotte s'impose avec sa minéralité noble, sa tenue exemplaire et le dégradé complexe d'un millésime à l'autre; cela sans note d'oxydation excessive, même sur le 1985. Pourtant tous ces vins étaient dégorgés depuis la première commercialisation.

Tasting Salon first imposes a general silence, then comes the storm of sensations being shared from table to table. Great, powerful and surprisingly fresh coming to the pinnacle of Champagne Salon 1951, an extremely rare vintage that only two houses dared produce, and how right they were.

The real surprise of the tasting was found where least expected, in the great wines of Delamotte. Consensus came over the 6 tables, all were blown over by the noble minerality, exemplary structure and panorama of complexity from one vintage to the other. None of the wines showed any note of oxidation, and the purity of 1985 made a stand. To be noted that all the Delamotte bottles were disgorged at first release, and had been ageing on cork since.
